Can you believe it is October already?? The kids have been back in school for almost a month! It has been one crazy month! Most nights we are rushing around trying to get things done; we have homework, soccer practice, after school activities, and everything has to be accomplished. A tasty homemade dinner is a must have but as a busy soccer mom I need it to be as quick and easy as possible. When I picked up some Pace I decided to throw it in the crock pot for some 2 Ingredient Crock Pot Chicken Tacos! These tacos could not be easier to make and they taste amazing!
2 Ingredient Crock Pot Chicken Tacos Ingredients:
- Boneless Skinless Chicken Breasts *I used 4 breasts so we would have leftovers*
- 1-2 Jars of Pace Sauce or Salsa
- All the taco fixings you and your family enjoy
2 Ingredient Crock Pot Chicken Tacos Directions:
Spray the inside of the crock pot with a nonstick cooking spray
Trim any excess fat off your chicken breasts before placing them in the crock pot
Pour the Pace Sauce or Salsa over the chicken breast. Give everything a quick stir to make sure everything is coated
Cover with crock pot with lid and cook on low for about 4-6 hours or until chicken is cooked through
Using a spoon, remove the chicken breasts from the crock pot and place them into a kitchen stand mixer
Using the paddle attachment set it on slow and allow it to shred the chicken *I had mine just right then accidentally flipped it on again so we ended up with super fine shredded but it worked*
If the chicken seems dry you can always add in more juice from the crock pot, plus it will also add more flavor to the chicken!
Serve with all your favorite taco toppings and don’t forget the chips and Pace salsa on the side!
