Funfetti Cake Batter Cookies!!

The batter looks even amazing!!! I only had a Betty Crocker rainbow chip party cake mix so I used that instead of vanilla it was absolutely amazing!!!! I am going to try the recipe with out sprinkles on a chocolate mix this weekend. The cookies were so soft and moist!! I made this into 24 cookies to make it go faster it was pushing bed time!
Funfetti Cake Batter Cookies
makes 30-32
1 box vanilla cake mix, 18.25 oz
1 tsp baking powder
2 eggs
1/2 C vegetable oil
1/2 tsp vanilla extract
1 C color sprinkles
Preheat oven to 350°. In a large bowl, mix together the cake mix and baking powder. In a small bowl, mix together the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine. Stir in the sprinkles. Drop by spoonfuls onto a cookie sheet or silpat.

Grilled Turkey Mozzarella Burgers
So my busy Angie at Successful 2gether posted this recipe last year and I have wanted to try it ever since!!!! When we moved our old grill was broke in the bad weather but with my new grill I have been a grilling fool!!!!

Chicken Mozzarella Melts With Recipe Linky!!
I am IN LOVE with this quick recipe!! We have made it a couple of times since for a quick-lunch!!! I recently got this book free on Amazon but it’s not available any longer called Points Plus Chicken Recipes Cookbook.
Ingredients needed
1 Loaf Italian bread (or two slices)
1/4 cup spaghetti sauce (we are a traditional Ragu family!!)
1/4 cup mozzarella cheese (The Italian blend was AWESOME!!!)
6 oz of Fresh Grilled Chicken breast strips (I have used Tyson’s cubed grilled chicken for this was still awesome!!)
Extra spices (I did just garlic salt)
*First step pre-heat your oven and slice your bread!! I am still struggling with adapting my bread slices down to weight watcher sizes and am not entirely sure how to tell. Plan to ask at a meeting this week!!
* Second step mix your spaghetti sauce with the chicken and if you want extra spices
Then assemble!! Lay out your bread on a cookie sheet put on the sauce and chicken then top with the cheese!!!
Then bake in the oven for about 5 minutes to melt the cheese!!!!
And this recipe was kid tested and approved!!! This is listed as 5 points each but be sure to recalculate as ingredients may vary!!!

Foodie Friday Thanksgiving in March!!!!

It was Thanksgiving in our house on Thursday!!! Every year during November and December we buy 5-6 extra turkeys for the next couple months!! We always get the “huh” looks but then when we tell people we are doing a Thanksgiving its “When’s dinner??” This time we used a different way to cook the turkey (Better then blowing it on the “big day” right?)

Yup I put the turkey in upside down!!!!!!!!! IT still turned out great!!!! We normally put the turkey in a bag and baste it. However this time I warmed some butter and mixed it with garlic salt and spread our turkey with it. I did put some chicken broth in the bottom of the can and next time will put in two cans instead of one. Oh and I’ll be sure to put the turkey in the right way!!!!!!!!
22lb turkey $6
Free Green beans
2.5lb Of potatoes $1.50
Stove top Free
Biscuits (not pictured) $.84
Total Cost $8.34!!!
Not bad for thanksgiving dinner rut through!!
And we have tons of meat left over for casseroles and dinners!!!!

Stove Top Casserole with Weight Watcher Break down
So this recipe is a favorite of my kids and the hubby!! I am constantly asked what can you eat and most look at me like i am crazy when i say anything in moderation!! There are ways to make this recipe less points fat free cheese, fat free milk, and reduce fat campbells but I use the “regualr” versions of the food!!!
1 Box Stove Top Turkey (Or Chicken)
1/4 Cup Cheese (we used to use more but cut back on it)
1 2/3 hot water1/3 Cup milk
1 Can Cream of Chicken
Shredded chicken (or turkey) this time i had 11.7 oz (Used to calculate points) I mass cook it in my crockpot and freeze for later usage
So directions for assembly!! So easy you can do it while helping homework, cleaning house, and fighting power rangers
- Spray down your pan and place in chicken and preheat oven to 350 degrees
- In a sepearate bowl mix together 1 2/3 cup of hot water and stove top so its moistened and let set while you assemble the rest
- In a seprate bowl ( i use pyrex measuring glass the big one) mix 1/3 cup milk, can of cream of chicken, and the cheese.
- Spread soup mixture over the chicken
- Spread the Stove Top over the top of the Soup mixture and chicken
- Bake for 15-20 minutes depending on your preferred crunchiness of the stove top
Now the fun stuff the point break down!!!
11 ounces of chicken breast 11 points
1 box of stove top 16 points
1/4 Cup of cheese 3 points
1 can cream of chicken 10 points
1/3 cup milk 1 pointTotal points for the WHOLE casserole is 41 points.
6 servings = 7 points
