It’s the time of year, the beginning of the year. Everyone is doing their best to start out the new year healthy, but being a soccer mom I still have a crazy soccer schedule and kids school schedule to balance! Casseroles are a go-to of mine any time of year, but I love finding ways to make a healthy casserole for the whole family as well! I love that I can set them up and just throw them in the oven, great for our late night soccer practices as well.
