Lemon Weight Watchers Muffins 1 Points Plus Value

Lemon Weight Watchers Muffins are only 1 Points Plus Value and made with only three ingredients!!
I have fallen in love with these 1 Point Plus Lemon Weight Watchers Muffins I found in a Weight Watcher Facebook group!! I am normally not a lemon fan but these are amazing!!! With only three ingredients they were quick and easy to whip up! My kids and the neighbor kids helped to devour them and we will be whipping up another combination this week!! (I am thinking a chocolate variety of these muffins) Be sure to follow me on -> Pinterest for more great recipes!! I used my Grazia Silicone Muffin Pan to make these. I hate dealing with muffin wrappers. Our batch made 32 so I did have to use a couple mini muffin metal pans with liners to bake them all at once.

  1. 1 Lemon Cake Mix
  2. 1 100 Calorie Lemon Yogurt
  3. 1 Cup of water
  1. Pre Heat oven to 350 degrees
  2. Mix together all ingredients together in bowl
  3. Line or grease your cupcake pan
  4. Fill half full (These ones grow large with baking)
  5. Bake for about 15-22 minutes depending on your oven

Be sure to recalculate your cake mix and how many muffins you were able to get out of the batter in your etools. I was able to make 32 mini muffins. I think it would make 13-14 regular muffins.

    I would love to try these – I count calories, not WW points. I am sure this must be a typo in the recipe, because surely one little muffin can’t have 2,232 calories! Can you please advise as to the correct calorie count? Thanks so much :)

      Because she’s using the WW’s calculator, that is the total for the entire batch. You would just need to divide by how many muffins it makes for you (same for fat, protein, etc.). In her case, with 32 minis, it would be around 69-70 calories each. Hope that helps. :)

    I made these tonight, they are wonderful! So easy to make have an actual muffin consistency. I calculated my WW points and they came out to 2 points each but I believe thats because I had larger muffins.

    These are so easy and perfect. I was on weight watchers about 8 years ago and still count points, but by the old system. I can’t wait to try these for mid-morning snack when I am starving! Pinned!

    For some reason I have been loving lemon flavored everything. I don’t know what it is, but lemon just gives a dessert a special twist in flavor that is just so delicious! I can’t wait to try these muffins.

      Good thinking Kyla. I also think saying a “muffin” is 1 point and it turns out to be a mini-muffin is a huge let down.

    Wow, these look so easy! And I love lemon anything, so I know I would love these! I would probably have to hide them from myself because eating them all at once would negate the WW value… 😉

    These were amazing. As a new member I’m so glad to find recipes like this! one note: i am going to add some real lemon and a tsp of lemon zest next time to give them a bit more zing. Poppy seeds would also be nice.

    I calculated the smartpoints at 2 for 32 muffins. Mine made closer to 44 and it was still 2 pts so I’m going to full them slightly fuller next time to get more out of my 2 pts!
