Weight Watchers, Chicken Fried Rice, is a family favorite!! Once I started WW, I was much more aware of ingredients and cooking processes!! Controlling ingredients and what goes into my food makes a difference in the point value.

Chicken Fried Rice is on the menu in our house at least once a month. I love to use chicken breasts in dinners that the kids love! I love that I can pack this full of zero-point options, and the kids love this dinner. Chicken breasts are a good base for most dinners since it’s a zero-point food!

WHAT IS Weight Watchers?
When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.
New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.
I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.

Weight Watchers Chicken Fried Rice Ingredients:
Chicken breasts diced-Chicken breasts work great in this; large chicken breasts produce the largest amount of meat to use in recipes. This is also a zero Weight Watchers point food as well. Boneless Chicken Thighs are good, but the chicken will be greasy and add points.
White rice– You can substitute the white rice with brown rice or even crockpot Quinoa to lower points.
Eggs– These will be scrambled so that any size egg will work or diced Instant Pot Eggloaf

how to Make WW Chicken Fried Rice:
Prepare your white rice, I throw mine in a rice cooker to make while doing the rest of the steps.
In a frying pan, add a little olive oil and minced garlic.
Once the pan is warm, add in your chicken to start cooking.
In another pan, scramble your eggs; I do a dozen. They are 0 points on the Weight Watchers plan, which also helps to get extra protein.
Chop up your green onion too, or use a pair of scissors
Prepare your carrots and peas, cook them in a pan of water, or steam them in the microwave.
Once your chicken and rice are done, combine everything to make your fried rice.
With tracking points, I always assemble mine separately to measure and then mix them to serve the rest of the family.

Now be sure to rebuild this with the amounts you use to make your fried rice. Every brand will vary in point values and affect the point value of your serving. Now, the only thing with points is the rice and soy sauce!!

How To Store Leftover Weight Watchers Fried Rice
Allow to cool off and store in an airtight container or bag. Keep in the fridge for up to five days after cooking.
How to Reheat chicken fried rice weight watchers
You can reheat on the stovetop in a skillet or the microwave. When I reheat in the microwave, I cover the plate or bowl with a wet paper towel to help with moisture.

- 2 Pounds Boneless Skinless Chicken Breast
- 3 Cups White Rice
- Green Onions
- 12 Ounce Frozen peas and carrots
- 3 Tablespoon Olive Oil
- 3/4 Cup Soy Sauce
- 12 Eggs
Instructions

- In a frying pan warm up a little bit of olive oil and minced garlic.
- Once the pan is warm and in your chicken to allow it to start to cook.
- In another pan scramble your eggs, I do a dozen.

- Prepare your carrots and peas, either cook them in a pan of water or steam them in the microwave.
- Once your chicken and rice are done cooking start to combine everything to make your fried rice.

Hi Jenny. I love Fried Rice-but usually I get only Beef Fried Rice. Or if I go to the Habachi Grill- I get the Fried Rice there. It’s really good & you get to watch them make it & the rest of your meal right in front of you, which is fun. Generally I don’t like Pork Fried Rice at any Chinese Place. This Chicken Fried Rice looks Great! I’m going home from the library & making this tonight! And it’s Weight Watchers to Boot!Thanks for sharing-looks like you have a lot of Happy Campers!
