This Easy Crock Pot Beef Chili recipe is a favorite of my family and one we always get asked the recipe for! Now I will admit I was way late for jumping on this chili train but oh my gosh, let me say what a time saver this is for dinner!!! I first made this in 2017, and now we keep batches frozen in the freezer for quick dinners.

Now this crock pot chili was made even more easier in that I had everything on hand to dump and cook it!! I have shared before how to prepare ground beef (see -> here)to have on hand for easy dinners. Seriously, I can’t believe I hadn’t tried making this before at home; it will be going on the menu a couple of times a month from here on out.
Take a lot of prep work out of weeknight dinners and precook and freeze your cooked ground beef! Pull and defrost the ground beef to put in recipes like this for an easy weeknight dinner! (If you aren’t sure how to best do this, check out Freezing Cooked Ground Beef)
slow cooker beef chili Ingredients:
Ground Beef– The ground beef must be fully cooked and drained of grease before starting the recipe.
Onion– You can also use onion powder if your kids won’t eat onions or chop them larger for kids to pick out.
Bacon– I prefer to use thick-cut bacon for this; you will cut it into small chunks to cook before putting it in the chili.
Corn-Frozen or canned corn will work in this recipe, I tend to use canned as the corn is a bit firmer than frozen corn.
How To Make Ceasy Crockpot Chili
Spray your crockpot with a non-stick spray, I used my 8-quart crockpot, large enough we have leftovers to freeze!

Now if you don’t want to do the nonstick spray you can use crockpot liners, these make clean-up so much easier!
Crockpot LinersNonstick Sprays
Open up your cans of beans and corn and dump the cans into an over-the-sink strainer rinse your beans and allow them to drip dry.
Either reheat your ground beef or brown your ground beef in a pan and remove the grease.
Slice up your bacon and start to cook it in a frying pan, I didn’t cook my fully cause we like juicy chewy bacon.
Start to dump everything in the crockpot beef, beans, and corn
Open up your tomatoes and beef broth. If you are using Better than Bullion, start to make the broth that way.
Dump everything else in the crockpot and stir everything together.
Allow the chili to cook on low for 6-8 hours stirring a couple of times while it’s cooking.
What do you put in your chili?
How TO store Leftover Beef Chili
Store in an airtight container in the fridge for 4 to 5 days. You can freeze it in an airtight container or bag in the freezer for up to three months. Reheat in the microwave or stovetop to eat.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

Weight Watchers Point Breakdown For Beef Chili
Using 93% lean ground beef and regular bacon, my chili works out to 7 points a serving. You could reduce how much meat there is and add more beans to lower points. Or even take out the bacon. The ground beef and the bacon are the only ingredients with points in this recipe.

WHAT IS Weight Watchers?
When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.
New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.
I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. ( You can see the Weight Watchers Zero Point Foods 2023 -> here)
No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.
Right now, you can head on over -> here and sign up for Weight Watchers for $5 a month for the first three months.
