This easy Cilantro Lime Chicken Zucchini Recipe was one of the first veggie recipes I made for my family. I love that this works to 1 Weight Watchers Point on the Weight Watchers plan. It is so easy to make, and if you don’t have fresh zucchini, you can also use frozen zucchini spirals.

Now I love that Weight Watchers has made boneless skinless chicken breasts Zero Weight Watchers points! I love to find new ways to make this chicken is a favorite of ours. We paired this up a lot in the summer with Zucchini using a Spiral Slicer Spiralizer in place of rice and pasta plus, since it’s a vegetable, it adds zero points to the recipe itself. If you want this is also tasty on a small bed or rice as well.
WHAT IS Weight Watchers?
When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.
New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.
I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.

The only thing with points is the olive oil and the amount is so small per serving it works out to two Weight Watchers Points for the whole batch.

How To Make Cilantro Lime Chicken Zucchini:
Prepare your garlic, cilantro, and lime if needed.
Trim any fat off your chicken and then chop the breasts into chunks.
In a bowl, cover the chicken with some lime juice and then mix in the garlic.
Pour a little olive oil into a large skillet or saute pan so it’s enough to cover the bottom of the pan. Heat the pan on medium-high heat so the pan is hot, and then add the chicken and allow it to cook.
When your chicken has browned and cooked through mix in your cilantro and a bit more lime juice if you would like. (I always check mine with a meat thermometer -> here from Amazon)
While the chicken is cooking, start spiraling your Zucchini to be ready to go into the pan to cook to be mixed with the chicken.
Remove the chicken to a bowl, put a little more olive oil in the pan carefully, and add the Zucchini.
Stir the Zucchini till it starts to brown a little, and add more spices as desired.
Put chicken back in the pan to mix it up, add more Cilantro, and serve!

Any side dish can go with this dish! I love to pair up low-point entrees with a higher-point side if I have points. I tend to eat this one with white rice, but you can serve it whatever you want.

How to Store Leftover chicken and zucchini
Store leftover Cilantorl lime chicken and zucchini in an air-tight container or bag for up to 3 days in the fridge. The zucchini may not freeze the best, but the chicken will freeze for up to three months.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
